The more you learn, the less you know, one finds out!
I was trying to find out how Maillard reactions would influence Peat and Phenols in whisky!
So I googled it. YouTube-ed it. And found out there is an entire field of science I can learn about that will help me understand cask maturation and aging processes in whisky!
This video is the perfect excuse to buy a better BBQ so I can toast my oak staves 😉
But seriously, go read this excellent blog by Whisky Science on the same topic.
I am also finding out that Maillard reactions are most likely also helpimh in the color development during maturation.
